Les Amis

Singapore, Singapore

Les Amis Restaurant, flagships of the Les Amis group, has been a recipient of numerous awards over the years. The sophisticated first-born of the Les Amis siblings has been offering guests a flawless gastronomic dining experience since she first opened her doors in 1994.

The exquisite at Les Amis goes beyond just playing with various textures and delicate flavours. Every part of the meal, right down to the tiniest touches, is infused with Austrian Chef de Cuisine Armin Leitgeb’s passion for his craft and his sincere dedication to serve his guests with only the fines principally modern European gastronomy, Les Amis’ cuisine places much emphasis on not just how flavours blend and interact with one another, but also on the quality and provenance of the food itself. After securing the best ingredients available, a plethora of different techniques are employed in food preparation to ensure the fines tastes.

Les Amis boasts one of the most extensive wine lists in Asia. With more than 2000 labels for guests perusal and consideration, there is something to suit every preference. There is a predominance of wines from the Old World, but some interesting options from the New World have also been included. Aside from this, there are more than a dozen house pours that change with the seasons, in harmony with the menus offered.

Of Austrian descent, Chef Armin Leitgeb worked his way through the ranks with several Michelin starred chefs in Europe; including the then 3 star Michelin Pourcel brothers of Jardin des Sens in Montpellier, 3 star Michelin Paul and Marc Haeberlin of Auberge de L’ill in Alsace and 2 star Michelin Hans Haas of Restaurant Tantris in Munich.

Having seen enough of the fine dining kitchens in Europe, he traveled to the States to cook in The French Laundry for Chef Thomas Keller. Chef Leitgeb eventually returned to work for chef Hans Haas where he stayed for three years as his mentor’s Sous- Chef.

During the eleven years he spent on both sides of the Atlantic in various areas of kitchen management, Chef Leitgeb has finessed a cooking style that emphasizes the importance of textures and flavours, leaving no margin for error in the kitchen. “The simplest technique of cooking is actually the most difficult because there is nothing to camouflage any mistakes,” says Chef Leitgeb.

While he works primarily with contemporary European cuisine, Chef Leitgeb prefers not to be circumscribed by a singular style. He enjoys presenting guests with pleasant gastronomic surprised and relishes the reactions that his creations have evoked. Reflections of the seasons are found in his menus, which change regularly to include ingredients of the best provenance sourced from Hokkaido to Europe. For parties of 6 or more people, please note that cancelling a reservation within 7 days of the reservation will render you liable for a cancellation charge, per person, of $ 88 for lunch and $150 for dinner.
