Combal.Zero is an Italian restaurant in Rivoli, Italy listed as among the 50 best restaurants in the world. It forms a wing of the town′s castle, which dates back to the 13th century. The chef is Davide Scabin, and the restaurant has earned 2 Michelin Guide stars.

The restaurant was voted 28th best in the world in 2011, having risen from the 46th place in 2007. Restaurant magazine lauded its “hyper-creative, conceptual tasting menu”.

David Scabin, creator and theoretician of the Combal.Zero is unanimously considered one of the most talented explorers of culinary research. As the forerunner of modern “Art & Food Design”, he calculates and codifies everything, from the rhythm of cooking times to the handling and service, with a maniacal attention for details which builds ap the choreographic quality of the ambience.

From the Combal.Zero’s kitchen, situated in the superb context of the Castello di Rivoli Museum of Contemprorary Art, Scabin fascinates his guests with unique creations that spur from his long and design-oriented experimentation with ingredients, shapes, textures and temperatures. This approach opens a whole new chapter in the way we think of food, and has been acknowledged with Michelin’s Two Stars, the Gambero Rosso’s Three Forks, an 18.5/20 score from the Espresso Gourmet Guide, and ranks position 42 in the World Top 50 Best Restaurants.
